A siege workshop is used to make siege engine parts and ballista arrows. Parts are larger than typical products, and a few can quickly cause clutter and slow production if not moved to a stockpile. Both siege parts and ballista ammo are stored in furniture stockpiles, though it's recommended that those are customized somewhat to be more selective.
